Winter in Spain

Whilst I have done a lot of touring in Europe, it has only been in the summer.
I would like to go to Spain in the winter months, possibly January through March.
Ideally southern Spain would be good.
I don't want to end up on a campsite where I am the only van but on the other hand I have no desire to be sited in the middle of Benidorm. A site with good amenities  and not too far away from a town that has a bar and supermarket etc.
I'm interested in the cost for ferry crossing and campsite fees and the amount of sunshine we can expect.
A route would be useful.
