Overseas holiday without a caravan

Hi guys.  Normally we go caravaning, but occasionally we take to the airport and next year is no exception.  Its me and OH's 40th wedding anniversary and would like to go somewhere special, so we're looking at Iceland for a week to hopefully see the northern
lights and the geysers fields, etc.  Can anyone recommend any hotels, have any of you been
