What gas should I use for Europe?

We are newbies going on our first trip to france and italy in the summer for a six week touring trip. We are very confused by the different types of gas and regulators etc.  what should we buy? How much will we need? Can we get it refilled in Europe? Do
we need any different adapters or regulators? Help!
