To book or not to book - that is the question

We are off to France next week - Rouen, Chartres, Clement Ferrard, St Remy then somewhere near (ish) to Nice. We want to siget see rather than lay on the beach at a site that gives us access to transport links to Nice, Antibes Monaco. We want to be flexible
but on the other hand we don't want to find we can't get into sites as they are all full. Any advice please on just how busy any of the above places will be and if we really should book?
