I have a unit with a Luton over the cab and I know the tags need to be attached to the screen. So will I need to stick the 'dongle' lower down the windscreen? How do they work is it line of sight or do they communicate with the readers on the Peage lanes?

Hold it in place lower on the windscreen. Experiment. When you find where it works best stick it there.

Our last motorhome had a cab overhang so I put the TAG at wiper level and had no problems with it working automatically. I understand the sensors are overhead.

Mine also has an overhang and on my recent trip I used tags from three different countries. The instructions about fixing them were all the same. Stick the mounts as DK says, centrally just above the dashboard. Mine all worked there. As long as you don't have any metalic screening there should be no problem, infact I accidently strayed onto a toll road in Austria, took a wrong turning. My Go Box wasn't mounted but it beeped at me from the door side pocket! I came off at the next junction to double back onto my toll free route.
