Cheapest day/time for crossing channel

We rarely go out and back the same way as we like doing circular routes if going to France say.
This spring we are looking at sailing to St Malo then down to the Med, into Italy then Austria, Germany and back via Rotterdam.
Hopefully going this way we will be in the warmer weather sooner, avoid the German holiday at the end of May. By which time we will have left the lakes. As we travel further north on our way back it should have warmed up a bit. In Autumn we would do it the other way round.
The crossings we like from UK are overnight ones it means we have plenty of time to get to the port, Hull for us is a good one as we can leave home in the morning and be on the ferry that night.
Portsmouth and Plymouth also good as we only need 1 night halt and with the crossing being over 8 hours we get a decent sleep. No use though if heading east.
Dover we tend to do 2 night halts and get a morning crossing.
It really is worth working out the cost of fuel, night halts etc when checking prices, as we found out there is very little in it on some routes.

My research gave Newhaven/Dieppe as cheapest by far. For our return trip £320 as against Dover ferries or tunnel both around £540.00
And of course Dieppe is a reasonable bit further south so less driving once disembarked.
It will be our first time using it so have no idea of any possible pitfalls.
