Being off grid doesn’t require systems, it really doesn’t. Some folk have made it a hobby and throw huge sums at it. If we keep this discussion with an eye on the OP the cost is not that much more than I mentioned in my post. If folk want all the bells and whistles off grid then yes, it’ll cost a packet. In 2018 we did a seven week tour of the Highlands and Outer Hebrides. We used only three sites with EHU, spending just a few days on each. We regularly spend two to three weeks away off grid. I get a bit fed up with the off grid enthusiasts complicating something that is really quite simple.

We'll be off grid for our next two breaks, getting gas has been our chief worry. I can see a time when it will be electric only, so make the best of it and don't spend too much on gizmos. We manage with a 100w roof panel but we do need gas.

I still have in my "reserve" caravanning supply box a reel of cable that we used in the 1970s to connect the caravan electrics to the tow car when unhitched. A 7-pin plug on one end - a socket on the other.
I think things just went downhill after that!

In Spring 2020 we equipped our caravan for "off-gridding". This involved buying a cheapish suitcase solar pane, and adding a couple of USB sockets to the 12v system. I can't remember the exact cost - probably under £200.
With this we enjoyed short breaks down our fields, while Lockdown was in place. We cooked inside with gas, and outside with a charcoal barbecue. We read, and watched iPlayer etc on an Ipad. We didn't need anything else as we don't have any electrical appliances.
And the Solar Panel has come in useful when the digger was stuck down the fields and needed the battery charging.
Site fees? Cheap as chips (£0.00).

I understand- didn’t realise compressor fridges were so power hungry.
