When you say Northern Spain do you mean San Sebastián area (Cantabria) or Barcelona area (Catalonia)?  In either event I think the advice you will get for January is to go far further south.

there is a very good site Cantabria area, camping Oyambre, grass pitches can be troublesome if the weather is not good, and there is a good chance of a lot of rain in January, but there are some hard standings, 10 minute walk to beach, dog friendly in January. It is just 45 minutes from Santander ferry port, has a good indoor pool and mini gym, bar/restaurant, brilliant toilet facilities & it is C&MHC recommended. Was there in April when weather was good, but they had had a terrible winter. Good luck

Forgive me if I am telling you something you are well aware of, but do you realise that it will only be about four or five degrees warmer than London in January. The last two sites we stayed on coming home in December last year we had to get our water from the toilet blocks as outside the pipes were frozen up.

It is the case that the Cantabria area can be very cold. We hit heavy snow there in January this year, and have done in previous years. It's an area we rush through  in Winter.

While the received wisdom is that it is advisable to go beyond Valencia for the better weather, there are a couple of sites in Catalonia where people do pitch up for long Winter stays.

Vilanova Park, south of Barcelona: There is a regular bus service into the city. It is a well equipped site, however, it is not that near a beach.

Camping Les Medes at L'Estartit: We have not stayed at this site- used a different one in the town at a different time of the year -  but the location might suit. If you Google the site name, there are some accounts of Winter camping there which may give you more of an insight.
