can anyone recommend a quiet site around Santiago de la Compastela and Burgos in peak season?

Cannot speak for full season, but three good sites we have used:
Burgos, Fuentes Blancas, is a popular stop for a day or two for those travelling south for the winter. Easy drive into Burgos city. This is a large site, plenty of room in December & February when we have been there, cannot say for high season. It is very open so might get hot in summer
Santiago de Compostella: as Cancelas. This site is yards from the terminus of a bus route into the city which makes it very convenient. The entrance is narrow and a little steep but easily managed. Pitches are shaded and reasonably spaced. It is some years since we were there and it has been taken over by a chain since, but Camping Red chain have a good reputation (or at least the several we have stayed at have!)
Finally as you might be interested in the Camino, have a look at Camping Camino in CastroJerez. This is about 50km (40 mins) west of Burgos, so handy enough to go into the city. A delightful little site in a lovely village with old buildings and pilgrim hostels. The site is right below a ruined castle.
