Going to Croatia in July, should I book?

We are going to Croatia in July and are starting to make plans.  I was looking at a couple of sites and the minimum booking period is 7 days, we were hoping to stay on 3 sites for about 5-6 days each so do not really want to be tied especially now we have  a MH. 

Preliminary plans are overnight Harwich to Hook on 30th June, 2 days travelling then 2 nights at Lake Bled.  Into Croatia and 3 sites for 5 days each.  Up to Saltzburg for a couple of nights then 2 nights on the way home and later afternoon ferry on the 23rd July.

I know the UK holidays only start towards end of July but think the Germans may be off so wondering if there would be plenty of space so we can just turn up or should we book?

    A clue is to be found in the ACSI book.  All their discount periods in Croatia finish by the end of June so I would think it would be wise to book if going in July.  We are going in June, arriving in Croatia 5th June, and have not booked although we appreciate that the German holiday in early June may cause us some difficulties but we will have to live with that.  We are staying in Austria, on Ossiach See, for a week on the way back and have booked a site as we wanted a lakeside pitch.
