There isn't a 'best time, unfortunately - except perhaps at the times of the NEC Caravan Shows, when the Caravan Club sometimes make 'Show Offers' available for ferry fares. Otherwise, JVB66's tip (above) of saving up Tesco Vouchers is the best one.
Have a look at the ferry operators website, to get an idea when are the cheapest times to cross - as some time slots are significantly cheaper than others and even an hour difference can make quite a saving.

AD is right, when we changed from caravan to M/H we thought that the ferries would be cheaper but sadly not always.
Some companies will drop the M/H rate to the price of a car when they are offering a 'caravans got free' deal.
Sometimes the beginning of a week are cheaper than a weekend at other times its mid-week that is cheaper.
We've not done the tunnel as coming from Scotland its either Hull we use for the northern part of Europe, or we go to Portsmouth when heading to West/South France or Spain.
If you can be really flexible with your dates and timings then if you phone up and speak to the staff telling them your flexible they will search out a good deal for you.

Ferry fares are cheaper the earlier you book, on the Dover routes it can be cheaper to travel before 06.00 out and back, however, do price your preferred time too, as the difference may not be worth getting up early.
