Camping les Bouleaux near Beaune and south of Dijon is usually open in January but other sites open at this time of year are few and far between. Use the UKCampsite.co.uk website, click on Campsite Search and then Sites Open All Year.
Most Motorhome owners on that route will stay overnight in a Motorhome Aire. You have the bible listing them I suppose? But personally I would prefer a comfortable hotel with a big car park and good restaurant. Take care.

just for perspective, Calais to Dijon 5hrs, Dijon to Perpignan 6hrs, using tolls....that will be pricy in your big van, both for tolls and fuel if running more quickly.
add 50% to these times if avoiding tolls....so 16 hrs to Perpignan, for me thats at least two stops.
however, as its a one off trip, tolls might be the way....
im heading for spain around the same time but via Poole-Cherbourg and down the western route of Rennes, Nantes, Bordeaux, Bayonne, Pamplona, Zaragosa, Valencia...
any specific reason for the calais crossing? where are you heading from in the uk?
even from Calais, by routing south-west via Tours, Bordeaux you can be in Valencia in 18 hrs non-toll rather than on your route where Parpignan to Valencia would add another 7hrs non-toll (making 23 hrs), so 5 hrs longer via central and southern France.
however, travelling all the way on tolls, Valencia is 15 hrs from Calais, whereas Cherbourg (oddly) is an hour longer.
so non toll, there could be a large (5 hr) saving by using a different crossing, but little difference using tolls.
good luck.
