We have travel via Fussen-Innsbruck-Brenner-Cortina a few times to get to Croatia in a motorhome but we largely use the camper stops(aires) but have a look at Camping Tolblacher See which is in the Dolomites on the way to Cortina. It may be open when you want it.

Done this route with the caravan a few times to get to Lake Garda / Venice and no problems at all.
Detailed route Rotterdam, Through Netherland to Venlo, Route 61 and Route 5 to Karlsruhe, Route 8 to Ulm, Route 7 to Fussen, Through Fern Pass on Route 179, Route 189 and A12 to Innsbruck, A13 Brenner motorway through to Italy. Note you need to get a vignette at the Austrian border to use the A12 and the A13 Brenner motorway has toll booths.
Used the overnight ferry to Rotterdam and with a good run (520 miles 95% motorway) got to an overnight site at Pfronten (about 10 miles before Fussen).
Camping Pfronten They are open until 21st Sept per their website.
Never booked in case of delays, and they have pitches where you can stay hitched up for an easy getaway next day. Easy route out direct to the Fern Pass.

Camping Olympia in Dobbiaco is open all year, There’s lots to do in the area. Leave the Brenner Pass north of Bressanone onto the SS49 (E66). It’s a good road (we use it ever year in September). It’s a short hop to Cortina but many sites around Cortina close at the end of September.0
