Yes of course you can go all the way without paying tolls - if you really want to.
But the first stretch out of Calais is always worth paying for to get through the industrial zone and miss out towns like Bethune and St Omer - maybe as far as Arras which is worth an overnight to look around.
Then spread out a big paper map and pick out a route from there - and if you find speed limits and restrictions too tedious you can always cut back to the parallel autoroute

I did a similar trip a few years ago and I certainly agree with ET about using the toll road as far as Arras to avoid the industrial zones. It is very slow and tedious otherwise. From Arras I would plot a route to Reims,Chalons, St Dizier, Chaumont and Langres. From Langres we took the D974 to Dijon, the D996 and D1083 to Bourg en Bresse then into the Jura to Nantua on the D979. From Nantua we used the D1084 and D1508 to Annecy. With a 7.5 meter caravan you might want to consider using the A40 to cross the Jura from Bourg en Bresse. I cannot help with campsites because the only on route campsite we used was Camping Villegusien Le Laca just south of Langres, the remaining night stops were all French Aires.
