Breadmaker recipes!
There was a diversion into breadmaking on the Coronavirus thread and a couple of folk suggested offering some recipes. So here's a starter!
Carrot & Fennel Seed Bread
This will make a medium sized loaf.
Ingredients - 210 ml water
30 ml sunflower oil
10 ml clear hoNeyland
200 g grated carrot
500 g white bread flour
30 ml skimmed milk powder
2 generous tsp fennel seeds
1.5 tsp salt
1 tsp dried yeast.
To make - pour water, oil and honey into bread pan. Sprinkle over the grated carrot.
Sprinkle over the flour, making sure it covers the liquid.
Add the milk powder and fennel seeds.
Add the salt in one corner and the yeast in a small indent in the centre of the flour.
Set bread machine on basic setting and off you go.
When finished knock out loaf onto a wire rack to cool.
Eat and enjoy, perfect with pate or a wedge of cheese!

TDA, my Mum used to make that bread nearly every Sunday for tea, we called it milk bread. Thanks for the reminder. I'll try and dig out a no knead cook in pot bread....hope this fits in with the spirit Moulesy if there's no breadmaker around.

I make a bread maker loaf every other day (overnight - timed to finish at 5:00 when OH gets up, then it’s cool by breakfast after milking).
My go to recipe is (and sorry it’s a mix of units).
18 oz flour (I include in that a 5 seed mix, about a quarter of total)
teaspoon salt
2 teaspoon sugar
knob of butter.
350 ml water.
teaspoon yeast.
Breadmaker set at XL, dark crust. 4hr 5 min.
I vary it by using different flours, adding sun dried tomatoes, cheese, herbs, dried fruit and various nuts, malt extract.
No proper recipes (I’m not one for recipes) - just try it and see.
The only time we buy shop bread is for silaging boxes.

I think we have the same recipe book M! I just can’t get hold of any more flour at the moment and yeast is like unicorn poo!

I tend only to make normal bread in the breadmaker and bake it about every four days as we don't eat much bread. It makes lovely toast. Fortunately, at the time of lockdown my bread flour tub was full and I've managed to get more from Tesco to top up the tub since. I have half a little tub of dried yeast left but my son's neighbour managed to get me some more yesterday from Asda.
Looking forward to some alternatives to try.

The Breadmaker has certainly been working overtime over the last two or three weeks. Sorry to say I can't offer any recipes as I just eat it! Agree with Jill's comment about toast. Simon managed to get some French bread flour from a farm shop which is quite nice as it gives a more robust crust and perhaps slightly denser bread. Yeast could be our Achilles' heel if it doesn't turn up with out next delivery! Good luck to all with your on going bakery.

When I was lad in Cornwall mother use to make Saffron buns, we loved them with lashings of butter. I tried this recipe I found in an attempt to make a loaf in our Breadmaker, and it turned out quite well considering.
The Ingredients
1 cup milk
⅛ teaspoon ground saffron
1 tablespoon butter, softened
2 eggs
⅓ cup sugar
3¼ cups flour
1 teaspoon salt
1 package bread maker yeast
¾ cup raisins
The basic instructions
Add all ingredients, except raisins, to the bread maker pan in the order listed.
Set bread maker to the regular setting and start. Add the raisins when the beeper sounds to add additional ingredients.2 -
This makes a light wholemeal loaf, if you like it heavier, add more wholemeal and less white flour.
Add in this order......
1 tsp dried yeast
230g strong wholemeal flour
245g strong white flour
1tsp sugar
1tsp salt
25g rapeseed oil
325ml water
bake as large wholemeal loaf
(we have a Panasonic breadmaker, takes 5 hours)
knock out as soon as possible and wrap in a tea towel and place on a grid to cool.
best left to stand at least 12 hours before slicing, 24 hours even better.
will keep in fridge for a week at least.

B2 I’m guessing-heart issues, diabetes, high cholesterol, covid will be the least of the issues

Recipe using Spelt flour.....for rolls
1.5 tsp yeast
500g spelt flour
10g butter
1.5 tsp sugar
1.5 tsp salt
310 ml water
on our Panasonic machine program 34 to make the dough takes 2h 45m
This mixes and kneads then rests 30 minutes, then kneads again and rests 30 minutes, then kneads and rests again.....a total time of 2h 45m
Cut dough into 8 pieces, let it rest 15m, then shape into rolls and place on greased tray to prove at 35 degreesC until double in size, approx 40 min. Slash the tops and bake at 220C for 15-20 mins

Can anyone offer any advice on breadmakers?
Son and daughter were going to buy hubby one for fathers day. They're both students so nothing too expensive. Are the cheaper ones any good or would it be better to save up for an expensive one (maybe a birthday present from me)?
Can anyone recommend particular models?

Now there is a thought. Family have tried various machines but non as good as a the reliable old fashion methods my Gran used. Yes, it may be more time consuming and requires years of experience but the versatility, end result and satisfaction is far better. My dad used the kneeding/proving functions of his machine and then reverted to his trusty gas oven for the bake. Very reasonable results too!
Even the fully multi function machines require much trial and error 'til the end result is anything like acceptable in my opinion.

Cottage Cheese & Chorizo loaf
Ingredients
170g cottage cheese
210 ml water
1.5 tbsp olive oil
500 g white bread flour
2 tsp dried oregano
1 tsp salt & 2 tsp sugar
1.5 tsp dried yeast
75g diced chorizo
2 spring onions, chopped
To make put cottage cheese, water and oil in bread pan. Sprinkle over the flour and oregano. Add salt and sugar in separate corners and yeast in the centre of the flour. Set machine on normal. After 20 minutes or when machine beeps scatter the chorizo and spring onions over the mixture. Continue to bake and when finished turn loaf out to cool.
Delicious - The loaf only lasted a couple of days in our house!

OMG. Just had an email from a company that I contacted on 19th March. I placed an order with them, for those little bread-mix packs made by Wright’s. Just have confirmation that my order is now in stock and will be delivered next week. So........30, (yes,30) little packs to go at, mainly white and whole meal, but I am sure they can be made delicious with other things added. Shall be sharing them with family, friends. Haven’t been able to find any flour or yeast for weeks, so this is a real treat. Just need to dig out the bread maker again now.......😁

We’ve had a few over the years. The best (by far) is the one we now have, a Panasonic. We opted for the all-singing all-dancing top of the range, about £180? I think we’ve only ever had a few bad loaves, but that turned out to be the yeast. The beauty of this machine is that I don’t have to worry about the order and position of the ingredients as it has a yeast dispenser. I try not to use it often, as the bread it makes is just too nice, and I end up eating the lot, not good for the waistline
