South of Spain/Portugal

We have toured for the last 8 years in mainland Europe (caravanning) but the furthest we have been in Spain is Benicassim. We intend to tour the south of Spain & maybe Portugal next year - can anybody point me in the direction of blogs to read to help planning, please? Or offer any advice about areas to visit? We will leave during May for about 6 weeks & prefer scenic places, but everything is flexible.
