Visiting Ireland & the Euro

Due to time constraints we can only stay in Ireland for about two weeks in September.  We will initially be staying near Clonmel for 2 nights and after that we have about 11 nights before having to  return to Rosslare to catch the ferry back to Pembroke.

We thought of finding a campsite somewhere on the west coast and then another near Cork perhaps and staying 5 days on each.  Are there any recommended sites in these areas that allow us the best opportunity for seeing the various sights, enjoying Irish culture
and also accept dogs?  We though of going up as far as the Cliffs of Mohar but then the ferry does not accept caravans over 6m in length so looks like stating around Dingle is on the cards.

Secondly is it quite acceptable to use a VISA card or do most camp sites ask for cash.  Also should I buy a load of Euros now to use when over there in Septemeber just in case there is a huge improvement in the Euro or isn't it worth bothering about now?
Thanks.
