Winter - January February in Spain

We would like to get some winter warmth this year and are thinking of going to Spain in January/February.   We realise its not going to be hot but can anyone point us in the right direction to the warmest area and any campsites they like.   We have a 6m
campervan but once pitched we prefer to use public transport or bikes to get around so don't really want to be in the middle of a National Park.   Thanks for any help.
