Advice on towing through Spain

I would appreciate any advice on towing south through Spain from Santander to Almeria in January.

Which is the best route?

Overnight stops - including motorway areas which it seems are not recommended, but we may have no choice.

I am familiar with France, but something of a newbie in Spain.

Any help would be much appreciated.
