How do you use your Cadac

As the title says how do you use your Cadac, I know most will use the pan stand for roasting but I use the deflector plate and BBQ grill as this way the heat is not so direct and there is a little bit more space for other items. If like me you have the older Cadac without the thermometer in the lid have you considered fitting one! chefs have a saying "when it's brown it's cooked.... When it's black its no good" or words to that effect. Finally how do you clean it, I'm fortunate in having finished my working life as a chef I have access to commercial cleaning materials such as Grease Cutter and Vanquish so I don't have a problem.
