When is best time to book ferry tickets to France?

We are planning to travel with our caravan to France (Dover to Calais) in August next year.  When is the best time to book the ferry to get the best deal?  Do the prices go up and down over the months or once the price is there does it usually stay the same? 
Not sure whether to book now or wait. Travelling with 2 children and dog.  Thanks
