Spain and Portugal - places worth seeing?

In one short week we are off for 6 weeks to Spain and Portugal.  I have started a blog

here which shows exactly the route we are taking.  I'll be adding photos as we go.

We are sorted for sites etc but would like to ask for recommendations of places to see en route.  There must be loads of really interesting places - towns, lovely countryside, hills and mountains etc and we may scoot right past them without knowing.  Any
offers?  Thank you. (and as the saying goes only 8 sleeps - getting excited now )
