Flexible ferry/tunnel bookings

We pre-booked the crossing for our current trip through the Club but for our next trip we want open return, preferably via the tunnel. Don't mind paying more but within reason. We could book through the Club but don't fancy waiting on the phone from Italy
if we need to change the date. Maybe we should just turn up at Folkestone and buy a ticket. Any ideas?
