I am a newbie to all of this when do bookings open

Often when I want to book a site at say half term time, or a weekend I find everything is already booked.  I assume everyone books way ahead, so how do I get to know when bookings open for certain periods, so I too can pre-book and not have to find alternative
accommodation other than club sites.
