Trip to Spain through France, no rush ! any advice

 We are off to spain in mid april this year ,going the long way through france and down along the coast as far as Denia if we get that far
,not booking any sites ,any advise on the route down ,we are not using motorways only to get through big cities ! any sites worth taking in as we make our way down
