Optimum route to Spain/Portugal

I'm starting to plan our first autumn trip to Spain and Portugal in late September  and would be grateful if anyone could offer any advice about the 'best' route using a mixture of RNs free motorways and peages. 

i intend to take about a week each for the return journeys and have 2/3 weeks there. Although not pushed for time I wonder if anyone experienced in this sort of trip can suggest a route that is compromise between the convenience and speed of the motorway
systems (particularly where they avoid slow, tedious main roads) with the more attractive non-motorway roads. 

I read a blog about this from someone who had a property in Portugal but I can't seem to find it. If you could suggest sites as stopovers or for a longer stay as well that would be a bonus. We prefer quiet sites in good walking areas.
