Working out towing weights

Hi there,nice to see a friendly forum!

My wife and i are are new to Caravanning.We currently have a Conway Cruiser folding camper,which is great but we are now thinking of selling and getting a caravan.

We're not in the position to change our car but there is some confusion about what we can safely tow with it,Im aware of the 85% rule etc,and ive looked into some of the conversion checkers but Id like to be sure of the safe towing weight etc.

We have a 2011 Skoda Fabia,its a TDi SE CR 75.

V5 states Revenue weight of 1659kg.

Mass in service is 1204.

braked trailer max weight 1000kg,unbraked 500kg.

So do i base my caravan buy relative to the Revenue weight,or the Mass in service?I realise you have to take in account extra weights,so for example it would be me and my wife,possibly our 5 year old granddaughter in the car plus sensible luggage.(case of
beer possibly too).With the above info of my car,i would be grateful if someone could help me with the max weight of the caravan i could buy (as they are always advertised as their unladen weight) but taking into account 'average' loads in car /caravan? im
thinking of a max unladen caravan weight of 900-1000kg?
