Hake with Onions and Potatoes ........... Serves 2

I cook this in a saute pan with lid when required. Could use a cadac. Any white fish but I like hake. One pot meal. I serve it in a bowl as I might with a stir-fry
Ingredients
- 50ml/2fl oz olive oil
- 1 onions, sliced thinly
- 2 garlic cloves, sliced
- 1 tsp paprika
- 4 or 5 small cherry tomatoes halved
- 60g pepper, diced)
- 250g potatoes, cubed
- 40g mangetout
- 40ml dry white wine
- Some water
- 2 x125g hake steaks or cod
- freshly ground black pepper

Preparation method
- Heat the olive oil in a saute pan.
- Add the onions and garlic and cook gently until soft.
- Add the paprika and fry for 2-3 minutes, then add the tomatoes and peppers and fry for another 3-4 minutes.
- Stir in the potatoes, then pour in the wine and water and simmer for about 20 minutes, until the potatoes are just tender and the liquid has reduced a little.
- Season the hake steaks well on both sides with pepper. Put them on top of the potatoes, cover and simmer for 8-10 minutes, until the hake is cooked through. Add mangetout 5 mins from end, serve with some lemon to squeeze
