Mobile networks

Would appreciate some advice on mobile networks in Central & West Scotland plus the Isles of Harris & Lewis. I am taking my husband who has lots of health issues & is disabled in our motorhome. I never worry about anything but it might be prudent to have 
a working mobile phone , possibly with additional sims & pay as you go. I tried all the network coverage sites but I belive they lie!
