Sorry in advance - Towing weights help needed

Sorry about this, I know its been asked a million times, but while there is tons of advice out there, I'd much prefer a clear and simple answer from some experienced people. (Yes, I'm hoping flattery will get me everywhere!)

We're selling our motorhome to buy a larger caravan as we need more space.

I have a Seat Exeo 143PS 2013.  I'm looking at the log book now, and the weights listed are:

Gross Vehicle Weight: 1990kg

Weight in running order (with driver): 1505kg

&

Trailer Weight Gradients up to 8%: 1800kg

Trailer Weight Gradients up to 12%: 1400kg

I'm assuming the trailer weight is the larger of the 2 usually-referred numbers, the mtplm rather than the miro.

I'll set this out as 3 simple questions to keep things as simple as possible

1 - What is the maximum mtplm caravan weight that I can LEGALLY tow

2 - What is the maximum mtplm caravan weight that is RECOMMENDED for me to tow

3 - I passed my test in 1998.  Am I correct in thinking that I am ok to drive my car with a caravan as the total weight will never exceed 3,500kg?
