Travelling in Portugal and Southern Spain

Hi. Travelled extensively throughout Europe but never to Portugal or Southern Spain. Live in  Northumberland and have booked Portsmouth-Santander ferry out, returning Amsterdam-Newcastle. Hoping to visit Coimbra and Porto before heading down coast to Algarve
then heading up to Spain (have 9 weeks). Would appreciate any advice on routes, sites etc. Oh, and any other recommendations to help 2 very excited seniors on their way.
