Avoiding roof puddles and freezing pipes

Hi. I'd welcome some guidance and advice from motorhomers with more experience than me. In April I purchased an Auto-Trail V-Line 610 and this is the first winter I will have had a van. I plan to use her for at least one weekend a month but she will be standing
inbetween for longer than usual. I have noticed that due to the shape of the Auto-Trail roof, any rain water 'puddles' towards the back which includes the seal of the roof light. If I used levelling chocks to slope her such that the front is higher than the
back then this would solve the 'puddling' problem but being a novice, I am unsure whether this will do any damage to other parts of the van.

I'd also like to avoid any frost damage in the out pipes for fresh and waste water. Both tanks have probe heaters that will stop the actual tanks from freezing but the pipes are just plastic. Can people recommend the best way to ensure they are properly
insulated. I'm particularly keen to know what people have found to work well.

Any guidance and advice would be greatly appreciated.
