Spanish Sites - Advance Booking

We're going to Murcia and Andalusia in Feb/March to some of the inland sites to do some walking and cycling.  Thinking of sites such as El Berro, Reina Isabel at Granada or El Sur near Ronda.

Would we need to book in advance at that time of year? Thanks for your suggestions.
