Ferry crossing from France to UK

Hello ,we are intending to spend some time in Spain and France in Dec/Jan/Feb. The outward crossing is booked; what is the best way to book a return crossing, when we have decided on our date? We would prefer to land somewhere in Kent, but that is not imperative,
