Fontainebleau. Coast. Other!

Hi. My husband and I with our 10 and 8 year old are venturing to France for a 3 week adventure. We fancy fontainebleau as my
husband used to climb there as a student.  Then moving on to the Atlantic coast.  Possibly Vendee.  Then heading back maybe near Rouen 

We've never towed abroad.

We'd like a combo of sea/ pools/ cycling/ canoeing over these 3 venues.  

Any recommendations for good quality sites most welcome.
