Bilbao to Lisbon - Winter

Hi, We are heading off on a "family gap year" (actually 18 months) around Europe in a caravan. We are mum, dad and 3 kids aged 7, 6 and 1, plus a dog! We are sailing to Bilbao at beginning of December and heading down to family north of Lisbon in time for Christmas. I am looking for recommendations for a route and campsites. We are seasoned campers but novice caravanners so are looking for an easy route on major roads!  As it is winter we obviously need campsites that are open all year. If you have any ideas for nice places (we are looking at going via E80 unless anyone has better advice) en route please let me know! Many thanks
