Spain Jan/Feb

I have just booked a ferry crossing from Poole to Cherbourg departing on 4th January and returning on 15th February. For my Autosleeper Kingham at 6.3m long and 2 passengers the fare was £298 but I used my Avios (air miles) which covered the full cost.  
  We intend to travel to Murcia / Alicante / Valencia area but we don't like large sites or book in advance. We would appreciated any recommendations for both the journey down and during our stay.
