Fiat Pegaso181 Electrical Issues.

We have a 2003, Fiat Ducato 2.8 based, Rollerteam Pegaso181.
All was great until a few months ago, when if it was left for a week without being used, it would flatten the battery. I was told by an electrician friend, that this is very probably due to the Alternator, which I'm due to have replaced this week.
Another issue that appeared over the weekend may just be a flick of a switch solution.
I fitted a new battery, but didn't connect it fully as I was waiting for a new (better fitting) terminal. Fitted that on Thursday, and the van fired up straight away...Brilliant! A quick check on the battery indication in the van, and we showed 14.1V on 2 Leisure Batteries, which I guess was due to the van running and charging them. Took it for a 40 mile loop to keep things happy, and returned home.
Last night, I put some bits and pieces in the van, only to find out that it was without any power. There was no life on the display above the door that shows Battery, Water or Temperature, and there was no lighting. The van started immediately.
Have I just tripped an Breaker? The batteries look in generally good condition. The radio died during the loop, but didn't blow its own separate fuse, this may be related (or not).

Not sure about that. Was hoping any Alternator trouble wouldn't cause too much damage to the battery in a short time. My only real worry is the battery being flat on the morning I take the van to the garage. Will have to take it off and charge it to be certain of a start.
