We stop there on our way north as it is 2 hours from Dover. It is always busy, and often takes 5 minutes to exit onto the roundabout. If you follow the signs to caravan parking you should get a space, and I think there is some grass area across the road. There is also some grass area behind the car parking spots but that is often used for child excersise, so dogs probably incompatible! Basically the whole service area is too small, and there are not even many exits from the M11 to give you alternatives. Stopping there,or indeed at most British service areas makes you appreciate the facilities abroad.

Not far away is Hatfield Forest, NT, loads of space and parking. Plenty of dog walking.
Same roundabout take the exit signposted ?Takeley? it's the last exit before rejoining M11 in opposite direction, probably the fourth, the immediate exit after the airport/Colchester turn off. It's a huge roundabout with traffic lights so you need to keep your wits about you 😉.
Depending on how long you have to travel afterwards you can spend several hours there. With your motorhome lovely to picnic and a trillion times better than any service station!

Guess you mean Birchhanger Green services which locals call Stansted services just to confuse matters!
Good Luck
