I too have weighed everything that I have put in the caravan and created a spread sheet. Some of these weights were for items transferred from our previous 'van. To reduce the weight of the caravan I have removed the unused upper bunk bed which gave me a weight credit of 15kgs.
The base weight that I used was the manufacturers MiRO as this was a few kgs heavier than the actual weight when checked on a weighbridge on the way home after collecting the 'van. This gives me a bit of a margin of error on the 'safe' side. On any journey I can be fairly confident of the actual weight that I am towing within a margin of about 5 kgs, The 'van is usually a bit lighter on the return journey as much of the food has been eaten.

We also removed the upper bunk on our previous van, a good weight saving. On this one we leave the (heavy) table behind and instead have put a small aluminium one for outside in its cupboard. The front chest flap is sufficient for the two of us when eating inside.
