Made soup yesterday, OH put out the ingredients for me......
1 medium butternut
1 large sweet potato
1 large potato
2 medium carrots
1 large parsnip
1 large onion
6 cloves of garlic
3 stock cubes ( 2 chicken and 1 beef as that was all we had)
1 large soup pot
Cut everything up reasonably small, add water to cover and cook for about 45 minutes till everything is soft.
Liquidise when cool, add some milk to thin if necessary.
Season to taste.
Serve with a swirl of creme fraiche and some croutons.
We had some for lunch today, rest has gone in the freezer, it was very good
I prefer to liquidise the soups, I find it gives a better result than the stick blender, especially on larger quantities.

I think they are fine for smaller quantities, great for getting lumps out of sauces and custard, but I like to make a big batch, this was about 5 litres, and our stick blender struggles with that large an amount.
Liquidiser is really easy to clean, only extra washing up is the bowl the soup goes into before being portioned out.

Carol makes Beetroot and Tomato Soup,which I quite like. It has a bit of a kick to it.
1 vacuum packed beetroot (not pickled)
4 Large ripe tomatoes
2 veg stock cubes
1-2 tsp mixed herbs
Pinch of chilli flakes - to taste.
Chop beetroot ad tomatoes into quarters, place all ingredients into pan, cover with water to reach 1 1/2 litres, bring to boil, simmer for 20-30 min and blend to taste. Carol uses a soup maker machine and she says it's easy. This is a Slimming World recipe.

Leek & Potato soup for dinner today.
No real recipe.
Chopped an onion and three leeks (all that was left in the basket).
Sweated in butter.
Added one chopped celery stick (all that was left etc) and a few wrinkled potatoes (peeled and chopped)'
A handfull of red lentils, added vegetable stock. S&P
Top oven of Aga for about 45 mins, bottom oven for about 30 mins.
Whizzed up.

OH will probably put grated cheese on his.
