Can't you get your inspiration from browsing the shelves? That's what I do.

I do try to meal plan CY. Inspiration is needed due to the restrictions of the cooking facilities in the van.

I'm with Cyberyacht on this... browse the shelves and see what there is. I keep a very basic store of goodies in the van and buy fresh ingredients as we go. OH isn't keen on planning meals when on holiday, as she hopes we might find a nice pub or restaurant
to have a meal.We don't go away at bank holidays (and never use internet in the van), but I'm making a paella for dinner. It's Jamie Oliver's chicken & chorizo recipe, and a great 1-pan meal for cooking in the van.

Depends very much on those Facilities, Catherinef.
Most of us, towers & m/homers alike, probably have two or more gas rings, possibly a grill and/or oven and a work surface on which there may be a microwave, halogen oven, Remoska, electric hob etc etc. all of these
variables will give you endless variety in your diet . So just go for something different for your meal ==> some
have cooked ( & boasted about !} full Christmas Dinners others settle for toasted Spam butties & a gottle of geer !Whatever you choose please tell us -- we are dying to know !!

Pork fillet, sliced into medallions. Saute in a bit of oil for 4 mins. Turn pork over, then add some sliced mushrooms. Cook for another 4 mins. Add a tablespoon of brandy, then cook for a couple more mins.
Stir in some single cream and a teaspooon or so of wholegrain mustard. Season with salt and black pepper. Heat through, then serve with new potatoes and veg of your choice.Very easy, very tasty and you should be able to get all ingredients between Morrisons and the farm shop

I'll be cooking that at home tomorrow CY. You'd be more than welcome to join us
Tonight is pizza night ..... homemade of course
A very kind invitation but a bit far to come despite your equally tempting avatar.

We had fillet steak served with roasted vegetables seasoned with salt, pepper and rosemary. All done in one roasting dish and a frying pan so not a lot of washing up either.
