Dedicated usually plugs into the existing wiring loom and can therefore inform the cars cpu that you are towing. This may make alterations to stability controls, switch off rear parking sensors etc. You're warranty will not be affected.
Bypass just piggybacks onto appropriate wires using scotch locks. Any resulting problems might affect your warranty.
If it was me I would go with dedicated every time even if it is more expensive.
Try an independent tow bar fitter, many dealers use them and add their profits bumping up the price.

My local fitter describes the choice as Dedicated or Universal. Dedicated should work all the electrical functions and not affect your Warranty. As Simon says it is more expensive but if you make the arrangements rather than the dealer that will save some money. Whereas Universal might not work all electrical aspects with all the different vehicle manufacturers.
