I've never done one, but how hard can it be?
Seriously, a lot of fridges are removed by removing 2 screws on either side .... just inside the door, plus obvioulsy the gas connections at the back, and the fridge will pull forwards. The element is then easy to remove.
Check that the plug is plugged in properly first though.

In these present temperatures the fridge will need about 4 hours to cool perhaps longer.
Make sure the caravan is also reasonably level.
Access to the element is often obtained by removing the fridge air vents on the outside of the caravan. I also changed mine through these vents no need to remove the fridge in my case. (which does involve removing the solid gas pipe)
Both elements can be located on a Dometic fridge near the bottom and just pull out. If its working of it should be hot.

A fridge element is normally around 125W. If you can get to the connection block you should be able to test the resistance of the element. It should give a reading of approximately 460 Ohms ish. When ours failed it gave a resistance of millions of ohms
ie no cicuit. When our water heater element failed it gave a resistance of 0 Ohms so failed short circuit which is why it tripped the electrics.If the element hasn't failed then check that the element is properly inserted into pocket it fits in. Also check that the insulation is properly in place.
Like Dartman I changed the element through the vents without fully removing the fridge. The only comment I would add is remove not only the vent grille but the frame as well as it gives more room to work.
