Sausages
When I was a lad there were only a hand full of different sausages you could buy but a visit to the supermarkets today and the number of ‘varieties’ is huge. Our local butcher makes only one, the proper Lincolnshire Sausage with the recipe being handed down from generation to generation in the family. Unfortunately you can buy what are marketed as 'Lincolnshire’ Pork sausages all over the UK these days but non taste like the real thing in my opinion. I do like a banger, don’t you, what’s your favourite choice?

My own home-made ones! Haven't made any for ages, though. Bought the mincer and sausage attachment for the Kenwood some years ago - using best pork from our local butchers and whatever herbs etc take my fancy at the time. Pork and leek was a favourite.
Our butcher even invited me to go spend half a day with him and he gave me all the tips of the trade. I think he recognised that I wasn't going to be much of an economic threat to him!
Making them is a whole morning's job though - lot easier to pop into town

Definitely Cumberland, the more peppery the better. Hate a bland banger.
I have to be careful though, especially eating out, as many a sausage contain rusk or wheat as a filler and I'm allergic to that.
If I don't fancy anything special in a pub or restaurant I'll always end up with Bangers and Mash, if GF.
My Saturday job as a school teenager was in a butchers section of a supermarket so learnt all of the tricks. Still didn't put me off though!

The best sausages I have ever had are Pork and Tomato from Frank Parker Butchers in Nuneaton.
I grew up on them as a lad, and still go back to buy them when I can, even though I now live in Dorset.
We came up to the NEC this week for the Caravan Show, and diverted via FP's on the way home. I just need a bigger freezer now!

I'm not a great sausage lover, but a Cumberland - not too peppery, Lincolnshire and since moving here Sawtry sizzler. It must be a good quality one!
Great little butchers in the old telephone exchange in Sawtry. He makes several different ones, changing weekly but sizzlers always on sale. If anyone is travelling on the A1 is moments off in Green End Lane - Butchers Blade. There given them a plug. Fabulous pubs, hams, bacon etc too.

Good quality Italian style sausages - those from M&S not bad but Italian delis have better - main spicing often is fennel but can include all sorts of things. We skin them and break them up into chunks and cook in a wine and tomato sauce with pasta. Almost the taste and memory of Tuscany.

We have a butcher’s near us called Owtons and they make a selection of sausages but my favourite is Corporal Jones, good flavour.
Going back a few years there was a very good butchers in Lyndhurst called Fred Strange and he made the best venison sausages ever, unfortunately he passed away and the recipe went with him.0 -
Veggie here, so my days of proper bangers are long gone. We do have a lovely Italian deli, and a Polish Supermarket in town, both are like a voyage of discovery. I used to get Mum charcuterie type sausage from both. One of my BILs was a butcher, so back in our meat days, most stuff was bought from him. He made his own sausages as well.
WN…snap! Back when I was in last year at school, and into 6th form, I had a Saturday, evening and school holiday job at our local Asda. Did all sorts, but eventually worked in butchery, only wrapping and fridge filling though. You would not have bought supermarket meat back in those days😱

Our local COOP has a counter run by a well regarded butchers. They actually won UK butcher of the year. They only sell proper beef and pork at a price but difficult to find better.
I think some of the current crop are, more about keeping costs down as things like apples are simply cheaper than meat.

My biggest concern is the quality.Most are now minced to death to squeese every bit of rubbish through the mincer. There used to be great butcher " Michael" in Keswick and his Cumberland's were very coarsely minced. Excellent but no longer there.Very rarely eat any now and never a supermarket one.
