Is it possible to 'down rate' a caravans Maximum technical permissable laden mass (MTPLM) ( kg )?

We have to buy a caravan that is 1250 (or less) to tow behind a 7.5ton truck (dont ask!). Lots of the vans we like are just slightly over the 1250  and we would be happy to forfeit some payload.

Is it possible and if so how?
