Mould in fridge

This year we have experienced mould growth in the fridge. YES the door was left open, YES it was cleaned after last use. We run a dehumidifier in the motorhome and on bright sunny days open up to get some fresh air. We constantly monitor the conditions within
the motorhome and do not have a damp problem but this happened quickly and took us by surprise. Has anyone else experienced this. I am happy to say it has cleaned up with no problem but I would prefer it not to happen again. 

We have also in the past had mildew on the cab curtain linings we have a silver screen but when we purchased it from the manufacturers he told us in no uncertain terms NOT to leave it on overwinter.
