Levelling with Jockey Wheel

Have been reading comments on levelling but would appreciate advice on how to compensate for pitches that slope so much that winding the jockey wheel fully up or down  still does not achieve a good level as experienced recently at Lady Margarets Park and
Dockray Meadow.
