Favourite bacon

A few years ago we saw a trend toward sausages with a variety of flavours, seasonings and ingredients being added. Well now I see more and more different bacons on sale. My Canadian relations tell me that there are many more in their home land. Anyone have a favourite cut, preparation or flavouring?
