Advice Please

We are looking to change our current tow car, a Hyundai IX35, which has been excellent towing our Sprite Major 4(1334kg fully laiden). The problem we have is that apart from towing we mainly do town driving, at a guess of the 10k or so we do a year probably 90% of that is around town. Although the Hyundai has been faultless it is not so great on fuel, we only average 35-38mpg solo. Therefore we are looking for a car that is more economical and also in a cheaper tax bracket to suit our daily needs but also that is able to pull our caravan. Favourite at the minute seems to be a Vauxhall Insignia Hatch 160bhp, it seems fairly decent on fuel, boot space is huge and the ecoflex models are £30 to tax which is a bonus.

Does anyone tow with an Insignia? What are they like? Are there any other cars that might suit our needs? Any advice would be great
